The problem was that the Visible app would not download the eSIM no matter what we tried. Eventually Tier 2 gave up and asked me to factory reset the phone and no, that's not gonna happen. But it seems that the physical SIM stays active until the eSIM activates, so even if the process fails you won't be out of service.
